Today, kosher consumers are accustomed to searching packaged foods for symbols, known as hekhsherim, that signify that the items have been certified as kosher by rabbinic supervisors. The most common, and oldest, of these is the letter U surrounded by a circle—the stamp of approval of the Union of Orthodox Congregations of America. This humble but important icon was introduced a hundred years ago; its origins are connected with the Squirrel Hill neighborhood of Pittsburgh, which to this day is home to a significant Jewish population.
